Today I have many ideas for organizing a party at home with a totally healthy menu.
I was organizing the celebration of my mother’s birthday, and of course, I was about to offer the traditional food that is served at a party, all that pile of sugary things, lots of fried things, harmful drinks, but in the end I decided not to fall into temptation. I said to myself: “I am in the capacity to prepare things that are very delicious and healthy at the same time”.
Then I started writing down ideas of what things I wanted to prepare and the list was huge, I had to reduce it either by the possibility of preparing large quantities or by how easy it´s to serve at a party. Also because of the availability of the ingredients.
This was the menu we enjoyed:
At first, I thought I had to prepare more things, but it was more than enough, I even had enough for dinner and some things for the next day.
Everybody at the party was surprised with the color of the hummus, they all loved the taste of the beetroot with the chickpeas. Then we had the soup, in these cold days everyone feels like having something warm, and this zucchini and peas cream is delicious. I also made a cereal bread to go with it.
As the main course, I made rainbow arepas, arepas are a typical Venezuelan and Colombian dish made from precooked corn flour, and they can be filled with whatever you want. For the party I made them colorful, with different ingredients that changed the color, flavor and nutritional values: beets, carrots, spinach. I also added oatmeal and ground flax seeds to make them more nutritious.
I made two filling for the arepas. The first, a mixture of shredded boiled chicken with avocado and Greek yogurt sauce (instead of mayonnaise), this is my healthy version of a Venezuelan dish known as “Reina Pepiada”. And the second, black beans, which I soaked from the night before, then I cooked them and finally mixed them with onion, garlic, peppers, and cilantro.
And finally the dessert, a chia pudding with hazelnut milk, topped with strawberry jam that I had made a couple of days before, with strawberries, apple, lemon, stevia, and chia. To decorate and complete the dessert I added sunflower seeds, roasted buckwheat, cashews, blackberries, and raspberries.
Since we were celebrating my mom’s birthday, we needed to have a cake, I decided to make it just like the banana and spelt bread I published a few days ago, but I added more stevia to make it a bit more of a cake than bread, and I added some pecans and hazelnuts. I did not decorate it because I did not want to alter its flavor, besides, we do not like frosting (that way I got rid of the sugar, etc)
For the drinks, I offered water, coffee, tea, and I also made infused water with some slices of lime. We also had an organic red wine to toast.
As you can see we had a banquet where everyone could taste a little bit of everything, everyone was satisfied with delicious and healthy food, we were able to eat two kinds of dessert, but without feeling guilty, and without feeling bloated because we didn´t abuse of sugar and refined flours.
You have to organize things a little, but preparing things in advance the previous night helps a lot, and dishes are not very complicated or have many ingredients (only the chia pudding because I wanted to decorate it with many things).
