Soups and creams are ideal dishes for the cold season, although in summer I like them as well, that hot plate and each warm spoonful in my mouth feels awesome! A few days ago I went to an eco-restaurant and they had a pumpkin and coconut cream on the menu, and when I tried it I said I had to make my version because it was delicious and creamy.
I got the ingredients and got cooking, the good thing is that I remembered to write down the amounts so I could repeat it and, of course, share it.
I also tried to make it simple, with few ingredients and the minimum cooking time, this allows to take advantage of the nutrients of each ingredient and to taste its flavor better, when too many ingredients are mixed and cooked for a long time I feel that the flavors mix too much and you don´t know what´s in it anymore, for some foods that´s ok, but for others I like to taste every ingredient.
