I’ve always been a gnocchi fan, I’ve always loved them. A few years ago I tried some sweet potato ones, and others made out of pumpkins and I fell even more in love. I was eager to get a recipe to make them, but I never dared to make them because I thought it was too much work.
Some time ago I bought a book with vegan recipes that I love called “Ama Come Vive Brilla” (mean something like: love eat live shine) by Elka Mocker, and I found the surprise that it has a recipe for sweet potato gnocchi.
One night I realized that I had all the ingredients and that I could start preparing dinner earlier, so I decided to make it….and how wonderful!
